In a medium bowl, add the ground pork and Chef Merito® Adobo para Al Pastor. Mix until thoroughly incorporated. Form into a patty and set aside.
Slice the pineapple into a ring and remove the core. Place on a hot grill and grill on both sides.
Toast the buns on the grill and set aside for assembly.
Place the pork patty on the grill and cook until the internal temperature reaches 160°F. Add the Pepper Jack cheese to the patty and allow it to melt.
Assemble the burger by spreading cilantro aioli on the bottom of the burger bun. Add the pork patty, grilled pineapple, spicy guacamole, and top with crumbled chicharron. Enjoy!
Spicy Guacamole
Ingredients
6 Avocados, ripe
1 Red onion, diced
1 Habanero pepper, diced
1 Bunch of Cilantro, chopped
2 Tbsp. Chef Merito® Jugo de Limón (Lime Juice)
1 Tbsp. Chef Merito® Fajitas Seasoning
Instructions
Place all ingredients into a bowl and mix together. Adjust seasoning to taste and add more habanero for additional spiciness.
Cilantro Aioli
Ingredients
4 oz. Cilantro, chopped
2 oz. Garlic, chopped
1 Tbsp. Chef Merito® Jugo de Limón (Lime Juice)
Salt, to taste
Chef Merito® Black Pepper, to taste
1 cup Mayonnaise
Instructions
Mix all ingredients in a bowl and whisk together. Adjust to taste.
