In a skillet, heat olive oil and cook shrimp seasoned with Chef Merito® Shrimp Seasoning for about 2-3 minutes per side until they change color. Reserve.
Spread pesto on one side of the bread, then top with sundried tomatoes, shrimp, and cheese. Close the sandwich and press firmly on the top.
In the skillet, heat about ½ Tbsp. of butter over medium-low heat until just melted.
Place your sandwich in the skillet and spread more butter over the top of the sandwich.
Cook on each side for about 5-6 minutes on low heat, or until each side is a nice crispy golden brown.
